This cool climate Sauvignon Blanc displays beautiful layers of tropical fruit like guava and litchi with hints of lemongrass and kiwi on the nose. The palate has great intensity and length, balanced by the natural fresh acidity and leaves a clean finish.
Grapes are hand picked early in the morning to retain freshness and fruit flavours. They are crushed and destemmed into the press giving the juice some skin contact before being separated. Only the free run juice is used. The juice is settled and cold fermented in stainless steel tanks to enhance the varietal characters. After fermentation, the wine is left on the lees for six months before being racked, fined and stabilised in preparation for bottling.
Groot Constantia is testimony of Simon van der Stel ’s love for wine who established South Africa’s first wine farm in 1685. Compelling evidence of the success of South Africa’s oldest wine being Emperors and Kings such as Frederick the Great of Prussia and Louis Phillipe (King of France) buying ‘Constantia Wyn’ at auctions across Europe. It is now one of South Africa’s most visited tourist attractions.
