Harvested from the acclaimed "Le Jarrons" organic vineyard, this wine exhibits complexity and elegance with an impressive spectrum of evolving flavors and delightful textures. A lengthy aging process in 3rd use barrels, along with an extended elevage and slow fermentation, have contributed to this wine's remarkable balance. As is typical for Róisín's carefully crafted wines, this vintage was made in miniscule quantity, with only enough to fill a single barrel.

Róisín's vineyards largely practice organic farming, including with this wine, and the vinification is minimalist, allowing the land and variety to express themselves.

Regular forays to the area and ongoing connections with the growers ensure complete oversight of the procedure, resulting in such remarkable quality. The growers' response is unsurprisingly enthusiastic, the utmost honor that could be earned.

Róisín is a multifaceted figure, serving as a winemaker, micro-negotiant, pharmacist in Ballyhaunis, County Mayo, and ultimately a Master of Wine.
