Head brewer Kevin Byrne brings over 20 years of food science and manufacturing experience to the vat, having transitioned from Dublin’s large-scale hospitality sector to founding his own craft brewery. When the pandemic halted traditional keg sales, Kevin used the hiatus to perfect a ginger beer recipe alongside his daughter, Rachel Byrne. Rachel, who traded a career in business banking for her passion for Irish SMEs, now steers the brand’s vision, marketing, and growth. Together, they have blended technical mastery with a modern entrepreneurial spirit to create a refreshing, authentic Irish ginger beer that truly lives up to its name.
