    "The steep slope and altitude have successfully kept this very fresh in 2023. Arnaud is getting very excited! There is certainly a huge amount on the nose. The 2023 Vau de Vey still has the typical grass of this vineyard but now with a fine stony thread too. A little lemongrass behind. This is a beautiful example of a 1er Cru which is coming into its own. Impeccable balance and length.

    Food Pairing: Delicious with fresh oysters, grilled sea bass, pan-seared scallops with lemon butter, and poached lobster. It also shines alongside creamy poultry dishes like chicken fricassee, roasted veal sweetbreads, and traditional French escargot with garlic and parsley. For a cheese course, consider serving it with a mature Comté, aged Gruyère, or a creamy Chaource. Vegetable-based options such as asparagus risotto or a simple goat cheese tart with herbs also work beautifully.| 🌡️ Serve the wine between 10-12°C

     

    STORY BEHIND THE WINE

    This family-run estate in Chablis, Burgundy is led by brothers Arnaud and David Lavantureux and is one of the most respected domaines in Chablis. Their philosophy is to produce intense and vibrant Chablis whose richness and complexity complement the natural minerality of the Chablis soils. Their Vau De Vey plot is sunken and faces east, making it one of the coldest climates in Chablis. The vines planted directly in the rock draw the most pronounced mineral intensity of the range.
