    STORY BEHIND THIS WINE

    For over 130 years, the Mothe family have been crafting exceptional Chablis wines at Domaine du Colombier. Passed from generation to generation since 1887, it wasn't until 1957 that Guy Mothe began to master the art of vinifying Chablis. Now, Thierry Mothe heads the vinification, carefully perfecting the 100% Chardonnay vineyards.

    The Chablis Grand Cru appellation covers just 100 hectares, yielding only 5,500 hectolitres annually—these prized terroirs lie on the right banks of the Serein, in soil enriched with tiny fossil oysters. Grapes are harvested by hand and vinified for 12 months, with 80% aged in stainless steel tanks and 20% in oak barrels (the only wine produced by the estate to see oak aging).
