    "The 2017 Dom Pérignon is so impressive. A sort of mini-2002, the 2017 is a Champagne of textural richness and resonance above all else. Its creamy, voluptuous contours are so inviting. Production for the 2017 is tiny, about a three-month supply, so this wine will come and go pretty quickly. That represents a fairly dramatic shift in philosophy at Dom Pérignon. In the past, a wine like the 2017 would not have been commercially viable because of its small volume. Today, Chef de Caves Vincent Chaperon prefers to bottle Dom Pérignon in every vintage, if possible, as a document of the year, even if that means some releases will be very small."

    Food Pairing: Seafood is excellent, particularly caviar, lobster and langoustines. Also delicious with creamy cheeses like Brie or Brillat-Savarin | 🌡️ Decanting recommended prior to tasting to blow off slight initial reduction - Serve slightly warmer than a standard "entry-level" Champagne, at a temperature around 10ºC.


    STORY BEHIND THIS WINE

    Dom Pérignon is one of Champagne’s most iconic names, created in honour of the legendary Benedictine monk who helped shape Champagne’s winemaking tradition. Dom Pérignon is made only in exceptional vintage years. Owned by Moet & Chandon, the very first prestige cuvée Champagne was produced in 1936.

    The year 2017 was marked by historic warmth and episodes of extreme weather. Spring brought frosts, followed by a hot, dry summer. Late-August rains created botrytis pressure. These contrasting conditions gave rise to Chardonnays of great ripeness, while the scarce Pinot Noirs displayed a remarkable balance between maturity and freshness. This vintage represents a radical gesture bringing to a close thirty years of creative research led by Richard Geoffroy.
