Silky and fresh red from a high-altitude site inĀ theĀ Andalusian region | A wine for curious explorers

On the nose, this is like a handful of fresh wild berries with a cool, minty lift, perfectly balanced by a touch of sweet spice and toasted oak. It drinks beautifully, feeling silky and fresh on the palate. Because it was aged in large barrels, the oak doesn't overpower the fruit at all; it simply gives the wine a wonderfully refined and rounded texture. The finish is long, juicy, and just a little bit smoky, making it incredibly easy to go back for a second glass.

    • Blend of 71% Petit Verdot, 20% Syrah, 9% Tempranillo
    • Aged for 15 months in 300 and 500-litre barrels.
Cellaring: Ā Perfect now through 2032
Food Pairing:Ā  Pour it alongside hearty legume dishes like traditional lentil stew with smoked chorizo or a slow-cooked white bean and pork casserole. For red meat, it shines with a charcoal-grilled ribeye steak or braised beef cheeks. It also pairs beautifully with earthy rice dishes such as a traditional meat paella or a rich wild mushroom risotto.Ā  | šŸŒ”ļø Serve at temperature around 16-18°C

    STORY BEHIND THE LABELĀ

Set within an 800-hectare Holm-oak woodland at an impressive altitude of over 900 meters, the Cortijo los Aguilares estate champions terroir-driven, sustainable winemaking. Their 19 hectares of vines, rooted in clay-calcareous soils since 1999, are farmed without herbicides or pesticides to fully respect the natural environment. From this unique high-altitude site comes Pago El Espino, a beautifully crafted blend of Petit Verdot, Tempranillo, and Syrah. The grapes are carefully hand-harvested and immediately chilled to 2ĀŗC to preserve their freshness, then gently guided through a traditional, gravity-fed winemaking process before patiently resting for 15 months in 300 and 500-liter oak barrels.
