Subtle undertones of coriander and fragrant green cardamom emerge, culminating in a wonderfully zesty finish characterized by bright, sunny lemons. Gin Mare is a truly exceptional spirit, crafted with an unwavering dedication to Mediterranean time and tradition. Starting with a premium barley base, the process involves delicate maceration and separate distillations for each botanical—a technique essential for capturing their full character. Some ingredients, like the Spanish citrus, undergo a process that takes over a year to perfect. This meticulous approach culminates in a proprietary blend that allows the distinctive Mediterranean botanicals—including Italian Basil, Greek Thyme, Turkish Rosemary, and Spanish Citrus—to express their unique features in the final gin. Even the core botanicals of juniper, coriander, and cardamom are grown on the distillery's own farms. The gin's name, 'Mare,' is inspired by the ancient concept of 'Mare Nostrum,' reflecting the special culture of this region.
