    Richly concentrated and structured St Emilion Grand Cru

    From a small parcel of densely planted vines within the larger Simard vineyard, this fine wine has great definition alongside its rich tannins. Perfumed Cabernet Franc gives both texture and spice, richly concentrated and structured.

    Food Pairing: Perfect with classic meat dishes such as roasted rib of beef, grilled lamb chops with thyme, or a tender magret de canard with a red fruit reduction. The wine also complements earthy flavours like wood-fired pigeon, sautéed porcini mushrooms, and truffle-infused pastas or risottos. For a cheese course, it is best served alongside creamy yet structured options like Brie de Meaux, Saint-Nectaire, or a moderately aged Comté  | 🌡️ The wine should be served at around 16°C to 18°C

     

    STORY BEHIND THE WINE

    The first traces of this estate date back to the 16th century and it was given its current name by the Simard family in 1865, during the Second Empire. The house, in the seaside-villa style of the Roaring Twenties, is the work of Léonard and Charlotte Gratadoux, who acquired the 4-hectare property in 1917. Château Haut-Simard never left the family and, through succession and expansion, its 10 hectares returned to the Vauthier family in 2008. Since then, major investments have brought out the potential of this vineyard at the foot of the slope, where limestone and sand mingle with seams of clay.

    Manual harvesting, precise sorting of the berries, temperature-controlled vats, the choice of concrete vats or ageing in barrels for a year: all these steps are aimed at maintaining the high quality associated with Saint-Émilion. With a density of 12,600 vines per hectare, the Haut-Simard vineyard enjoys south-south-west exposure.
