Food Pairing:Ideal with roast duck breast such as Magret de Canard, especially served with a dark sauce or blackcurrant reduction, boeuf bourguignon or rack of lamb. It also matches well with small game birds or dishes heavily featuring wild mushrooms | 🌡️ Serve around 15-16 °C

    STORY BEHIND THE WINE

Domaine Michel Noëllat is located in the heart of Vosne-Romanée, one of the most renowned wine regions in the world. Since 2012, Sébastien Noëllat (winemaker) and his cousin Sophie Sirugue-Noëllat (marketing & export) have been leading the estate in its 6th generation – with fresh energy, modern techniques, and deep respect for Burgundian tradition.

The domaine cultivates 23.5 hectares organically and currently vinifies 26 appellations, including prestigious Grand Crus such as Echézeaux and Clos de Vougeot, impressive Premier Crus from Vosne-Romanée and Nuits-Saint-Georges, as well as expressive Village wines. Especially noteworthy are the single vineyards Aux Allots and Aux Genaivrières, which feature vines up to 90 years old.

Hand harvesting, full destemming, and site-specific vinification are at the core of the philosophy. Fermentation is carried out with natural yeasts, and maturation follows a nuanced approach to oak depending on classification (up to 70% new oak for Grand Crus). The wines are aged for 15–18 months in French oak, then gently sulfured and lightly filtered before bottling.
