    STORY BEHIND THE WINE

This wine is born from a small 1.00-hectare parcel of mature, 50-year-old vines rooted in rich clay-limestone soil. Production is meticulous: Grapes are harvested by hand and 100% destemmed, followed by a  cold pre-fermentation soak(3-5 days) to enhance color and aroma. Fermentation is temperature-controlled in stainless steel (18-20 days). The wine is then  aged entirely in vats to preserve its fresh character before being bottled directly at the Domaine.

While Bourgogne Passetoutgrain (a blend of Pinot Noir and Gamay) is disappearing, the AOC Bourgogne Grand Ordinaire has been replaced by the AOC Coteaux Bourguignons, which encompasses the vineyards of Burgundy and Beaujolais and allows for the production of single-varietal or blended wines in all three colours, red, white, and rosé.
