    Refreshing, chalky and saline top Chardonnay from Mendoza

    "This is always minerally and incisive and very different from White Bones. This is more classic chardonnay, with lots of freshly squeezed lemons, wet stone, flint and seashells. Brisk acidity on a medium- to full-bodied palate. Tense and intense, but this is acid-driven with a fine touch of salinity that lingers at the end. Drink or hold."

    Food Pairing: Perfect match for fresh seafood like oysters on the half shell, scallop crudo, and classic citrus ceviche. It also pairs beautifully with light pasta dishes such as linguine with clams, as well as pan-seared halibut or grilled sea bass. For non-seafood options, serve it alongside a crisp goat cheese salad, an herb-roasted chicken, or a savory vegetable tart |  🌡️ Serve between 10°C and 12°C 

     

    STORY BEHIND THE WINE

    The Adrianna vineyard is located at almost 1.450 m elevation in the Gualtallary sub-district of the Tupungato region. The rocky soil prevents deep root growth and allows for ideal drainage conditions. These are very poor soils where the vines are constantly in conditions of stress. The cool nights allow for very slow ripening, optimal acid retention and low yields.

    Cold settling for 12 hours in stainless steel tanks at 6º C. Fermentation in French oak barrels for 45 - 95 days at 16°C. Battonage. Partial malolactic fermentation. Aged for 12-16 months in 2nd, 3d and 4th use French oak barrels.
