STORY BEHIND THE WINE
The fruit was harvested between September 19th and October 6th, 2015, with yields kept to a concentrated 37 hl/ha to ensure maximum depth and flavour. In the cellar, the wine underwent a 30-day fermentation in traditional wooden vats, using pneumatic pigeage (punching down the cap) for a gentle yet thorough extraction of color and tannin. To build structure and complexity, the wine was aged for 17 months in 55% new oak barrels on its lees. To preserve its natural character and texture, the wine was never fined.
