Crafted from a meticulous selection of specific vineyard parcels, this organic cuvée is produced entirely from Demeter-certified grapes. The harvest is balanced equally between hand-picking and mechanical harvesting to ensure optimal fruit quality. In the cellar, the winemaking process begins with direct pressing - partially incorporating whole bunches - followed by cold stabilisation and settling. To preserve its vibrant profile and natural purity, the wine undergoes low-temperature fermentation before being expertly blended and aged on its fine lees in stainless steel tanks.
