Dry Sherry Wine Styles: A Quick Guide

Fino Sherry: Delicate and dry, Fino Sherry is aged under a layer of yeast called "flor," which imparts a fresh, crisp flavour with notes of green apple and almonds.

Manzanilla Sherry: A type of Fino Sherry, exclusively produced in the coastal town of Sanlúcar de Barrameda. Manzanilla typically displays more coastal aromas than a Fino, like seaspray, salty touches or even a hint of iodine. In Spanish, manzanilla means chamomile, which is an aroma typically found in this type of sherry.

Amontillado Sherry: Amontillado Sherry undergoes a fascinating dual aging process. Initially, it matures for several years biologically under a layer of flor yeast, imparting a crisp character. Then, it's refortified and aged oxidatively without the flor, which exposes it to oxygen. This unique method combines the fresh qualities of a Fino with the rich, nuanced complexity of an Oloroso, resulting in delightful nutty and caramelised flavors

Oloroso Sherry: Arich and robust wine, crafted from the second pressing (Secundo Pie) of grapes, which provides a coarser, more complex texture than the first press. After pressing, the wine is fortified and enters a solera system to age. Crucially, it matures without the protective flor layer, allowing it to oxidise slowly. This process develops its characteristic deep, nutty, and sometimes subtly sweet flavours.

Palo Cortado Sherry: Beginning its journey with a short time under flor, a Palo Cortado sherry is crafted using only the most delicate first-press must (Mosto Yema). However, it's fortified to approximately 17% ABV at a very early stage, immediately halting the flor's development. This early intervention allows the sherry to undergo its remaining aging oxidatively, much like an Oloroso. Comparatively, an Amontillado will spend a much more significant time under flor. Consequently, Palo Cortado is often described as an Oloroso with exceptional finesse.

Sweet Sherry Wine Styles: A Quick Guide

Pedro Ximénez: (PX): A sweet Sherry made from sun-dried grapes, PX is known for its luscious, syrupy texture and flavours of raisins, figs, and caramel.

Pale Cream: Pale Cream Sherry is a sweet sherry style made by blending abiologically aged dry sherry (like Fino or Manzanilla) withrectified concentrated grape must to achieve its sweetness and maintain its pale colour. It offers a fresh, delicate sweetness with notes reminiscent of its Fino or Manzanilla base (e.g., hazelnut, dough)

Medium: Medium Cream Sherry is a sweet blended sherry. It's typically made by taking a dry, oxidatively aged sherry (often Amontillado, sometimes Oloroso) and sweetening it by blending in either naturally sweet wines (like Pedro Ximénez or Moscatel) or rectified concentrated grape must.It offers a balance of the nutty, complex notes from its dry sherry base with a noticeable but not cloying sweetness, often exhibiting flavors of dried fruits, caramel, and pastries.

Cream: Cream Sherry is a rich, sweet blended sherry, typically created by combining a dry, oxidatively aged sherry (most commonly Oloroso) with a naturally sweet wine, such as Pedro Ximénez (PX) or Moscatel. It is known for its dark, often mahogany colour, velvety texture, and complex flavour profile that balances the nutty, mature notes of the Oloroso with intense sweetness and hints of dried fruits, caramel, and sometimes coffee or chocolate.
