Prosecco

Italy's leading sparkling wine comes from the northeastern part of the country and is made using a different method than Champagne, the tank method, aka Charmat method. 

Typically, the "tank method" is employed, where the second fermentation occurs in a large tank. During this process, yeast and sugars are added to the base wine. As fermentation continues, the tank is sealed to trap CO2, which gives the wine its fizziness before it is bottled and sealed.

The most esteemed Prosecco wines come from the hilly Valdobbiadene sub-region. At the pinnacle of Prosecco's quality pyramid is Superiore di Cartizze, a designation within the larger Conegliano Valdobbiadene Prosecco DOCG. This "grand cru" vineyard is not a separate appellation but a sub-category of wines from this top site. Cartizze's Proseccos are revered above all others, with its vineyard standing majestically against Valdobbiadene’s rolling landscape, its vines cascading down from steep cliffs.

Prosecco is an incredibly versatile sparkling wine that pairs wonderfully as an aperitivo with antipasto, cured meats, and almonds. It also complements Asian cuisine beautifully.
