    Maggie Domaradzka from Whelehans Wines

If you feel like the wine world has been leaning a bit too hard into heavy, high-alcohol bottles lately, you aren't alone. There is a movement brewing in the cooler corners of Europe - Poland, Austria, and Germany - that is doing the exact opposite. We’re calling it "The New Cool," and it’s arguably the most refreshing shift in winemaking we’ve seen in years.

We’ve moved our wine tasting to a Friday to capture that 'Friday Buzz' feeling. There really is no better way to kick off the weekend than with a fresh glass of wine and a great group of people. These wines are all about energy, and that’s exactly what a Friday night is for. Join us on March 20th for a masterclass where we'll really get into what makes these regions so unique.

    What’s the buzz about?

"The New Cool" isn't just about the weather; it’s about a philosophy. It’s a group of producers focusing on low-intervention, sustainable viticulture and letting the "steely" mineral depth of their land do the talking. These aren't shy wines—they are vibrant, living, and packed with energy.

    The Lineup

David Whelehan is joining forces with Polish wine specialist and former sommelier Maggie Domaradzka to walk you through a flight of true icons and emerging stars:

    • The Polish Pioneers: You’ll taste the work of Beata Jantoń, who is doing incredible things with sustainable PIWI varieties (perfect for pure, crisp sparkling wine), and the ultra-precise, site-specific bottles from Kamil Barczentewicz.

    • Austrian & German Benchmarks: We’ll have the crystalline, sharp-focused wines from Turk (Austria) and the gold standard for Scheurebe from Pfeffingen (Germany).

    More Than Just a Tasting!

We’ve also partnered with the crew at ICIAR to pull together a spread of artisanal cheese and charcuterie. We aren’t just picking 'good' snacks - every pairing is being specifically chosen to play off the flinty, fresh textures of the wines we’re pouring!
