Cathal McBride - La Scolca White Label-Etichetta Bianca 2020

"Vegetarian dishes can be notoriously difficult to pair with wine, but the varied and thoughtful dishes from Glas Deli provide an exciting challenge. For a white, I'm going for the La Scolca White Label-Etichetta Bianca, 2020. Made from the cortese grape, it's crisp and deliciously fresh, with zippy citrus acidity that would work well with the rich pea and saffron lasagne, but would also pick up on the faint, fennel notes, when paired with the fennel gratin."
