Intense appealing red color with garnet highlights. Outstanding clean and bright, spicy nose with hints of red stone fruit, plum and cherry. On the palate is structured but soft standing out the strawberry caramel and the liquorice. It shows freshness with a silky ending.

The Castaño winery is a specialist in producing wines with the Monastrell variety. It was the first winery in the Yeclaappelation to bottle.The vineyards used are less than a quarter of a century old, situated at an altitude of around 750 metres. The vines are cultivated using short pruning on low bush vines. The soils are chalky and stony. The density of the plantation is around 1,600 vines per hectare, with a yield of around 3,500kg’s per hectare.
After the harvest has been carried out and the grapes have been transported to the winery, fermentation is carried out at 28ºC and maceration for 10 days. This is followed by malolactic fermentation, which is carried out in stainless steel tanks. Castaño Monastrell Ecológico is filtered but not stabilised before being bottled.
