    This iconic Vin Jaune offers remarkable length on the palate, built on the Savagnin's high, structural acidity which ensures its incredible longevity. It unfolds layers of walnuts, warm curry spices (coriander, cumin, turmeric, and fenugreek), and earthy mushrooms, leading to a finish marked by profound saline minerality - a direct testament to its long aging under the voile. The finish is long and lingering, inviting slow sips and quiet contemplation - a true meditation wine

    Food Pairing:  This Vin Jaune excels alongside aged Comté (18 months minimum) and walnuts, mirroring the wine's own nutty complexity.     STORY BEHIND THE WINE

    Chantal and Jean Berthet-Bondet moved to Château-Chalon in 1984, and they brought in their first harvest the following year. Their eldest daughter, Hélène, later decided to switch careers and study viticulture in 2013. With her father by her side, she gradually took over the reins and officially became head of the estate in 2018.

    The estate now covers 15 hectares of vines: 4.5 hectares in the Château-Chalon appellation and 10.5 hectares in Côtes du Jura. Most of the vines were planted in the 1980s, with more added through the ’90s and 2000s. Many of the slopes are steep and hard to work, so a lot of the vineyard is still tended by hand. The domaine made the move to organic farming in 2010, a decision that demands more time and attention but reflects their commitment to the land.
