Here's a quick description of different types of Sherry and Port wines to help you navigate the fascinating yet complicated world of fortified wines.  

Sherry Wines:

Fino Sherry: Delicate and dry, Fino Sherry is aged under a layer of yeast called "flor," which imparts a fresh, crisp flavour with notes of green apple and almonds.
Amontillado Sherry: Aged longer than Fino, Amontillado Sherry combines the crispness of Fino with added complexity, featuring nutty and caramelized flavors.
Oloroso Sherry: A rich and robust Sherry, Oloroso is aged without the protective flor layer, resulting in deep, nutty, and sometimes slightly sweet flavors.
Palo Cortado Sherry: Palo Cortado is a rare and complex style, with characteristics of both Amontillado and Oloroso, offering a harmonious blend of nuttiness and depth.
Pedro Ximénez (PX): A sweet Sherry made from sun-dried grapes, PX is known for its luscious, syrupy texture and flavors of raisins, figs, and caramel.
