Saumur-Champigny Cuvée Domaine is made from Cabernet Franc vines of average age of 25 years, grown on classic Saumur tuffeau-based sandy and clay/limestone soils. Manual harvesting only, coolish fermentation temperatures (16-24 degrees Centigrade) in order to preserve aroma and freshness. Elevage between 3 and 4 months in a combination of stainless steel and old wood foudres. It shows garnet with purple tints, exhibits lively aromas of irises, violets and red fruits, a balanced and ripe palate, harmonious and full and a smoky finish with subtle tannins. A good partner with a variety of dishes, Thierry recommends ballotin of chicken with cracked black pepper.
