Food Pairing: Opus One is best served with all types of classic meat dishes, veal, pork, beef, lamb, duck, game, roast chicken, ribs, hamburgers, barbecue, roasted, braised, grilled dishes and stews. Opus One is also good with Asian dishes, hearty fish courses like tuna, salmon, mushrooms and pasta.
STORY BEHIND THIS WINE:
Blended of 80% Cabernet Sauvignon, 7% Cabernet Franc, 6% Merlot, 5% Petit Verdot and 2% Malbec, the 2014 Opus One sports an inky purple colour and nose of crushed black and red currants, black cherries and mulberries with touches of underbrush, sautéed herbs and pencil shavings plus a waft of spice box. Medium-bodied, finely crafted and with an energetic line lifting the red and black fruits, it has a bold frame of grainy tannins and a very long, earth and spice-layered finish.
With a new winemaking team in place, and no longer any influence from the Mondavis, it is ironic that Opus One appears to have produced its greatest trilogy of vintages to date. This wine has always been more about sizzle than substance. While some top wines have emerged, others have been riddled with brett as well as lacking in concentration. That accusation can not be made against any of these three vintages.
Opus One was founded by Baron Philippe de Rothschild, legendary proprietor of Château Mouton Rothschild, and renowned Napa Valley vintner Robert Mondavi.
