A Carignan and Syrah blend fermented with wild yeasts and partly aged in terracotta jars and oak barrels resulting in a delightful wine with cherry and blackberry fruit plus notes of balsam, light spice and garrigue and a succulent fresh palate that makes for great drinkability.

STORY BEHIND THIS WINE
Domaine Cailhol Gautran sits on a limestone plateau in a beautiful river valley in the Haut Minervois. Nicholas Gautran is the fifth generation of the family since 1918 to run the estate, together with wife Olivia. Together they work in harmony with nature, farming organically, growing typical local varieties including Grenache, Mourvèdre, Carignan and Syrah and then craft wine with minimum intervention in the cellar, using just a touch of sulphur at bottling for their whites and rosés and none at all for the reds.
