STORY BEHIND THIS WINE
Arbois-Pupillin "Foudre à Canon" is a white wine from Jura defined as 'naturé' because it is based only on Savagnin grapes and 'ouillé' because it is aged for 20 months on fine lees in large oak barrels without oxidation. It has a fruity and citrus aromatic profile, characterized by energy, freshness and a savory flavor.
The “Foudre à Canon” Savagnin ouillé (topped up, no oxidation) from Arbois-Pupillin is grown on a steep 25-degree west facing slope at 350-450 meters altitude of gray and blue marls with “schistes cartons”. Entirely hand-harvested. Half destemmed, half whole-cluster. Fermentation without sulphites and only with indigenous yeasts in 1500 liter barrels. Aged in 1500 liter barrels on the lees for 12 months.
