STORY BEHIND THIS WINE
The winemaking process began with temperature control at 19°C for 15 days in stainless steel tanks. The wine then aged in stainless steel tank for 6 to 18 months.
Domaine du Colombier is run and cherished by the 5th generation of the Mothe family. Since 1887 they have grown their land holdings in Chablis to 55 hectares (133 acres). The ages of the vines range from 5 to 55 years. Jean-Louis, Thierry and Vincent Mothe strive to create some of the best expressions of Chablis.
