STORY BEHIND THIS WINE
Domaine du Colombier has been family run since 1887. Today three brothers, Jean-Louis, Thierry and Vincent Mothe work the 55 hectares of vines planted exclusively to Chardonnay. Together they create a range of classic steely Chablis that reflect the region’s unique terroir with the village and premier cru wines fermented in stainless steel and the grand cru in oak. A warm vintage has added notes of riper peach fruit and honey to the classic orchard fruit aromas supported by a fresh, stony, lightly chalky palate that makes this a perfect pairing with shellfish, particularly oysters plus grilled fish, sushi, roast chicken and firm cheeses.
